Raw Chocolate Parfait With Coconut Cashew CreamYield: 2 parfaits
Cook Time: 30 minutes
- 1 medium ripe avocado (it is better if it is firm rather than soft)
- 1 very ripe banana
- 1/2 Cup raw cacao powder
- 1/4 Cup agave nectar, coconut sugar, or maple syrup to taste
- 1 tsp organic vanilla extract
- 1/4-1/2 Cup water
Put all ingredients except water into a Vitamix. Start blending with 1/4 cup water and add more as needed. blend until smooth. It should be thick. Chill.Coconut Milk Cashew Cream
- 1/2 cup raw cashews, soaked 2 -4 hours
- 2 pitted dates soaked with the cashews
- 1/4 cup coconut milk
- 1 tsp vanilla extract
Drain cashews and dates. Pulse cashews and dates in a blender or food processor to break up; add coconut milk and puree until smooth. Add additional milk, 1 tablespoon at a time if mixture is too thick. Blend on high speed for a few minutes, until thick and creamy. This will thicken up after you chill it. Chill.
1 Cup fresh Berries
Unsweetened coconut flakes, for garnish
To assemble the parfait, spoon a layer of chocolate "pudding" into the bottom of a parfait glass. Top with a layer of coconut cream and then of fresh berries. Repeat, garnishing with unsweetened coconut flakes. Served chilled!!
