National Chocolate Parfait Day

This nutritious parfait uses a chocolate “pudding”. It's a rich puree that no one will ever guess is made with avocado. Cashews and coconut milk make a silky substitute for whipped cream and fresh berries round out a fabulous flavor combination.

The raw cacao powder in this is very filling and high in fiber, antioxidants, magnesium and even has 3 grams of protein per serving.  Cacao contains the highest concentration of antioxidants of any food in the world. Thirty times as much as green tea and ten times that of blueberries It opens up your heart to feel great because of the magnesium, the number#1 mineral in our heart. Cacao seems to be the number one source of magnesium according to David Wolfe author of Superfoods.

Raw Chocolate Parfait With Coconut Cashew Cream
Yield: 2 parfaits
Cook Time: 30 minutes
Cacao Pudding
  • 1 medium ripe avocado (it is better if it is firm rather than soft)
  • 1 very ripe banana
  • 1/2 Cup raw cacao  powder
  • 1/4 Cup agave nectar, coconut sugar, or maple syrup to taste
  • 1 tsp organic vanilla extract
  • 1/4-1/2 Cup water
Put all ingredients except water into a Vitamix.  Start blending with 1/4 cup water and add more as needed.  blend until smooth.  It should be thick.  Chill.
Coconut Milk Cashew Cream

  • 1/2 cup raw cashews, soaked 2 -4 hours
  • 2 pitted dates soaked with the cashews
  • 1/4 cup coconut milk
  • 1 tsp vanilla extract


Drain cashews and dates. Pulse cashews and dates in a blender or food processor to break up; add coconut milk and puree until smooth.  Add additional milk, 1 tablespoon at a time if mixture is too thick.  Blend on high speed for a few minutes, until thick and creamy. This will thicken up after you chill it. Chill.
Assembly
1 Cup fresh Berries
Unsweetened coconut flakes, for garnish
To assemble the parfait, spoon a layer of chocolate "pudding" into the bottom of a parfait glass.  Top with a layer of coconut cream and then of fresh berries.  Repeat, garnishing with unsweetened coconut flakes.  Served chilled!!
