Red palm oil*
2 large sweet onions, diced
3 celery stalks, diced
4 large garlic cloves, minced

4 bay leaves
3tsp ground cumin
4 tsp chili powder
1 tsp ground coriander
1 tsp Hungarian paprika-- add more if desired
1/4 tsp cayenne pepper
4 cups diced tomatoes**
5-6 C vegetable broth
2 cups red lentils, rinsed and drained
Salt and pepper
4 handfuls torn kale leaves***

Substitutions
* coconut oil
** 2 cans diced tomatoes
*** can use spinach

  1. In a large pot (6-8 quart), saute the onion for 5-8 minutes over medium heat.  Add celery and saute for a few more minutes.
  2. Stir in the bay leaf, spices, and garlic.
  3. Stir in the tomatoes and broth.  Bring to a near boil.  Add the lentils.
  4. Cover and simmer till lentils are tender...about 20-30 minutes.
  5. Stir in the kale 10- 12  minutes before serving.  If baby kale or baby spinach is used, stir in just 5 minutes before serving.
